Meet The Owners

Emilio Perna Ruggiero: GM/Owner
Emilio has 12 years of experience in the restaurant business, notably at Antica Roma and Acqua Pazza in Boulder, and Pane e Vino in Louisville. He has also opened the Amante Coffee realties in Boulder and worked with some of the most prestigious companies in the wine industry.

Marco Monnanni: Executive Chef/Owner
Marco is very well known in Denver and Boulder County as the owner and chef of Bacco Trattoria & Mozzarella Bar in North Boulder. He started his career over 40 years ago when he began an apprenticeship in his native Rome at age 14. Attending Hotel School in Verona, Italy then led to his work in restaurants in both Northern and Southern Italy, Switzerland, Germany and finally the U.S in New York and Las Vegas. Upon arriving in Colorado, he was last chef and owner of Antica Roma before opening the successful Bacco Trattoria in Boulder and Denver.

Silvio Cuomo: Executive Chef/Owner
At only 30 years old, Silvio is very accomplished in his profession. Born and raised in Naples, Italy, he attended Culinary School and worked several places in Italy before coming to the United States 13 years ago. He last worked as executive chef at Parisi and Firenze A Tavola, popular restaurants in Denver.

Arthur L. Annecharico: Co-Owner
A three-time Emmy Award winning television producer, Art has decided to expand his horizons during his retirement as a partner in Parma Trattoria and Mozzarella Bar. Being of Italian heritage and a lover of great Italian cuisine, his new interest in Italian cooking has led to a perfect partnership. As the largest independent television producer, The Arthur Company made its mark in Los Angeles during the 80’s and 90’s with over 900 hours of TV programming to its credit. Such shows as AirWolf, FBI, the untold stories, The New Munsters and many sitcoms were produced by him. Arthur retired and moved to Boulder where he pursues his many interests with his wife and family, his 1935 WACO biplane, his Harley motorcycles, film projects for charitable groups, and extensive world-wide travel. He’s looking forward to a long and tasty relationship at PARMA.

  1. HI! I recently ate at Parma for the first time and really enjoyed the gluten-free options (sauted calamari, mista salad and Tagliatelle Gamberi w/ GF pasta) I will back soon — maybe this week on my 18th birthday!.

    Also, please pass this note to Mr. Annecharico so he may see information about MENSCHEN, a non-profit film-project I am working on. Maybe he has ideas that will help us!

  2. I dine weekly at Parma and really have enjoyed th menu selections. Silvio has been especially gracious and friendly, and Summer is also extremely efficient and nice. I’ve brought in friends and family that have also been impressed with the menu offerings and the quality. So nice to have a little bit of “real Italy” here in Louisville! Gracie!

  3. I have been to your restaurant a couple of times for celebrations.
    It is wonderful What I love the most is how engaging your proprietor is.
    Great food, wonderful atmosphere (even thou its in a mini strip mall)
    good wines good times.

  4. I am usually pretty picky about Italian restaurants but I can honestly say this is some of the best authentic Italian food that I have had in the US since studying in Florence. Absolutely delicious and I will for sure will be back soon, thank you Parma for gracing us with your amazing food! :)
